Sushi first appeared in Southeast Asia around 400 BC.

As a method of preserving river fish, rice and fish were soaked in vinegar to ferment the rice and then stored.


It came to Japan around 700AD, and changed to the present sushi in Edo (old Tokyo) of Japan with the passage of time.


The sushi that can be seen today is said to have first begun around 1900, and it was triggered by the change to "quickly prepared" sushi at the request of people living in Edo -- perhaps the world's first "fast food"???


It seems that the reason why it spread all over Japan is that the sushi chefs who suffered from the Great Kanto Earthquake in 1923 returned to their hometowns and started to serve sushi locally.


Nowadays, there is no one who doesn't know sushi as it has become so famous that the word "sushi" is understood all over the world.
